2 cups protein powder (unsweetened or vanilla flavored protein powder)
1/2 cup collagen peptides
1/2 – 3/4 cup gluten free flour depending on how firm/moist you like things (Bob’s Red Mill 1 to 1 Baking Flour)
1 1/2 teaspoons salt (Redmond Real Salt)
1 teaspoon pumpkin pie spice
1 teaspoon ground nutmeg
2 teaspoons ground cinnamon
1 cup coconut sugar
1/2 cup coconut oil, melted
2 cups unsweetened applesauce
2 eggs
2 egg whites
1 can (15 oz) pumpkin puree
1/2 cup water
Mix all dry ingredients together with a whisk. Beat eggs and add to dry mixture along with all other wet ingredients. Mix until just blended and pour into greased mini-loaf pans. Bake for approximately 15 minutes at 350 degrees. Makes about 18 loaves. Enjoy!
